No-Oven Stuffed Garlic Bread Recipe: For the Dough: Maida / All-Purpose Flour - 2 Cups Salt - 1 tsp Instant Dry Yeast - 2 tsp Sugar - 2 tbsp Water - ¾ Cup Oil - 2 tbsp Other Ingredients: Mozzarella Cheese (shredded) - ½ Cup Sweet Corn Kernels - ¼ Cup Butter (melted) - ¼ Cup Garlic (finely chopped) - 2 tbsp Mixed Italian Herbs - 1 tsp Salt - 2 Cups Cooking Instructions: 1. In a bowl, add the water, yeast and sugar. Allow it to rest for 10 minutes. This allows the yeast to bloom. If it doesn’t rise, the yeast might be old or expired. 2. Measure 2 cups of Maida and put it into a large bowl. Add salt and mix, to make sure that the salt is distributed evenly. 3. Make a well in the centre of the Maida, using your fingers or a wooden spoon. 4. Add the wet mixture in the middle. 5. Start adding a little bit of flour into the wet mixture. Continue doing this until all the flour is mixed in, and a shaggy dough is formed. 6. Turn the dough onto a floured surface and knead well until a smooth dough forms. 7. Add 2 tbsp of oil to the dough. Knead well again until the oil is completely mixed in and the dough becomes smooth. 8. Cover with a damp cloth and allow it to rise for at least 45 minutes, up to 1 ½ hours. 9. Divide the dough into 4 portions. 10. Mix the chopped garlic with the melted butter. This is our garlic butter for the bread. 11. Roll one portion of the dough out into a 2 cm thick disc. Move this dough to a plate/tray that can stand heat. This is the tray that we are going to use inside the cooker. 12. Spread some garlic butter in the centre of the dough. Fill with shredded cheese and corn. Fold in half to form a semi-circle shape. Brush the top generously with garlic butter. 13. Cut the bread gently into 2-inch thick slices, without cutting all the way to the bottom. 14. To prepare our cooking utensil, add 2 cups of salt to a cooker or a heavy-bottomed utensil. DO NOT use the whistle weight and the washer. Keep this on high flame for 20 minutes. It is advisable to use an older utensil for this purpose, as the bottom of the cooker could turn dark after use. Place any metal ring to give an elevated surface to place the food on. 15. Place the pan inside the cooker, on the metal bowl. Close and cook on a highflame for 15 minutes. Check if it has reached desired colour on the outside.
