Beef Samosa | Simpler Version Using Filo Pastry Makes 35-40. 2 large potatoes, peeled and diced 3cm 1 cup frozen peas ½ tbs salt ¼ tbs salt ¼ tbs black pepper 500g beef mince 4 cloves garlic, chopped 1 tbs ginger, grated 2 large onions, diced 1cm 1 bay leaf, crushed ½ tsp cumin seeds 1 tsp ground cumin 1 tsp ground coriander 1 tsp ground turmeric ½ tsp ground cinnamon ½ tsp ground cardamom 1 tsp chilli powder 1½ tsp salt ½ tsp black pepper 2 tbs coriander, chopped 2 tbs green chilli, chopped Filo pastry Ghee (or butter if not available) Vegetable oil Boil potatoes and frozen peas with ½ tbs salt in water until potatoes are tender. Drain and mash together with ¼ tbs each of salt and black pepper. In a pot, toast bay leaf and cumin seeds in a small amount of vegetable oil on low medium heat for 30 secs. Stir constantly to ensure spices do not burn. Add beef and onion, increase the heat to medium, and fry until all liquid has evaporated, the meat has browned, and the onion softened. Add garlic and ginger and stir through for 1-2 mins. Add remaining spices and stir for another 1-2 mins. Add potato mixture and mix thoroughly. Set the mixture aside and allow to cool to room temperature. Once cooled, add coriander and green chilli and mix through. To roll samosa, use 2 layers of filo pastry each that is about 8cm wide. Scoop a heaping tablespoon of the filling and form a triangle with sides slightly smaller than width of pastry. Keep folding as shown in the video until the last full fold is reached. At this point, brush some ghee onto both layers of pastry and use it to secure the parcel together. Keep the completed samosas and unused pastry under a damp cloth to prevent it from drying out. Continue until all the filling is used. Brush both sides of each samosa with ghee before frying. Heat around ½ cm of vegetable oil in a pan. Fry samosas on low medium to medium heat on each side for about 45-60 secs until golden brown and crispy. ------------------------------------------------------------- Follow us on social media.
