Fruit cocktail isn't as popular today as it was years ago but those of us who were raised eating it still enjoy it. We remember the days when the only fruit we ate was what was in season and none of our fruit came from the grocery store. If it wasn't in season then it was in a tin. Here is how you can use fresh fruit in season to can your own Fruit Cocktail. Fruit Cocktail 8 1/2 cups of diced peeled peaches 6 cups ripe diced peeled pears 2 or 3 cups of diced pineapple 2 cups of pitted halved cherries 2 or 3 cups of seedless grapes cut in half if they are bigger As I cut the fruit I put it in to the pot I intend to boil it in. I cover it with water and add the juice of a half of lemon to keep the fruit from turning brown. In a separate pot I prepare the syrup. 2 cups of sugar and 4 cups of water but you can use less sugar if you like. Drain the water off the fruit and add the syrup to the pot with the fruit. Bring the pot to a boil and then immediately put the hot fruit into hot jars, ladle on the syrup, debubble the jars, wipe the rims, put on the seals and rings. Place it a hot water bath canner. Bring to a full rolling boil and boil for 30 minutes. When the time is up shut the stove off, remove the canner lid and let sit for 5 minutes.
