Printable recipe www.lancemeynell.com instagram @lance.meynell.official Ingredients 6 egg yolks 3/4 cup sugar 500ml double cream 500g mascarpone cheese 1 cup brewed espresso, cooled 50ml (Butterscotch snaps ) or to taste. ( you can use masala instead) 24 ladyfingers (for 3 layers) I use gluten-free Cocoa powder, for dusting Coffee grind, for dusting Whittikas dark 72 chocolate Orange segments, white part removed Orange rind Chocolate honey (or any normal honey) Instructions: 1: In a large mixing bowl, beat the egg yolks and sugar with an electric mixer on high speed until the mixture becomes light and fluffy over a low-simmering pot. 2: In a separate mixing bowl, beat the heavy cream until stiff peaks form. Add the mascarpone cheese to the egg yolk mixture and beat until well combined. 3: Gently fold in the whipped cream until the mixture is smooth and creamy. 4: In a shallow dish, mix together the espresso, butterscotch snaps, 1tbl of sugar, and orange zest, and let infuse. 5: Dip the ladyfingers into the espresso mixture for a few seconds, until they are soaked but not too soggy. Place a layer of soaked ladyfingers in the bottom of a rectangular baking dish. 6: Spread ⅓ of the mascarpone mixture over the ladyfingers. Layer segments of orange all over this layer. Repeat with another layer of soaked ladyfingers and another ⅓ mascarpone mixture, Lay another layer of orange segments. Repeat with another layer of soaked ladyfingers and another ⅓ mascarpone mixture. 7: Finish with a dusting of coco, coffee grind, and chocolate peel. Cover the dish with plastic wrap and refrigerate for at least 2 hours or overnight Cut into portions and serve cold.
