Sri Lankan Tempered Leeks | Super Quick & Easy | Vegan | ItsMrsShasha

It hurts me to see a lot of people throwing away the green part of a good leek. Us Asians love using this in our recipes. My Sri Lankan heritage has some traditional recipes using things that would be discarded otherwise. One of them is the green part of a leek. These can be tough, unlike the tender white part of a leek but when cooked right they are really delicious. I was a very fussy eater when I was small, but whenever my mum made these I would absolutely devour everything. You can also replace the leeks with spring onion. Make sure to cook is for a shorter amount of time as spring onion is tender than leeks. Below are the ingredients I used. Green Parts of Leek, chopped - 1 head Salt - To Taste Turmeric Powder - 1/4 tsp Chilli Flakes - To Taste or 1 tbsp White Onion, roughly chopped - 1/4 of a Large one Curry Leaves - 8-10 nos Tomatoes, cubed (Optional) - 1/4 Med one Maldive Fish Chips (Optional, omit if vegan) - 1 tbsp Rice Bran Oil (or another neutral oil) - 1 tbsp & little more if needed later Serve with steamed white, red or brown rice as a side dish along with other curries of choice. This perfectly goes with my Dhal Curry. Check out the recipe below.
