🇬🇷53: Cooking traditional Greek food in Athens

Hello and welcome to my channel 👋 Today we attended The Greek Kitchen cooking class in Athens. The class was held in a cosy kitchen and the teacher was kind and patient and had a passion for food and cooking. We started the class by heading to the central Varvakios market to pick up some groceries for the class. There we got introduced to the best quality Greek produce and learnt the history of the market. We returned to the class and began preparing dolmas. We first chopped all the ingredients for the filling, before adding the filling to the grape leaves and rolling it to the shape of a cigar. We put the dolmas into a pot to cook and began to make our second dish, spanakopita. Spanakopita is a savoury pastry filled with spinach, dill, parsley, olive oil and feta cheese. We each got a sheet of phyllo pastry, added a layer of filling and rolled the pies into a swirl. Then we brushed the pies with olive oil and put them in the oven to bake until it’s golden and crispy. Then it was time to prepare tzatziki. In a bowl, we added Greek yoghurt, grated and drained cucumber, minced garlic, olive oil and dill. It was so delicious and refreshing that it could have been easily just eaten on its own. Next was Imam Bayildi, which is a stuffed eggplant dish. We received an eggplant that was already grilled, so all we had to do was scoop out the inside and prepared the filling. For the filling, we used chopped onions, garlic, carrots, peppers, eggplant and tomato paste. To balance out the flavours we added some white wine, honey, salt and dried basil. We added the filling to the eggplant and finished the dish in the oven before topping it with cherry tomatoes and feta cheese. Finally, we ended the class by making portokalopita, a traditional Greek orange cake. The cake was moist and had a delightful citrus flavour. Overall, the class was a fantastic experience, and we left with a new appreciation for Greek cuisine. We also made some new friends, and we all enjoyed sharing the meal that we had prepared together.
