Get ready for holiday baking! In this video, I share 3 delicious Christmas quick breads that are easy to make, festive, and perfect for gifting or enjoying with family. Cozy flavors, simple ingredients, and beautiful holiday results. Gingerbread Ingredients 1/2 cup butter 1 cup sugar 1/2 tsp vanilla extract 1 egg 1 cup applesauce 1 1/2 cups flour 1 tsp baking soda 2 tsp ginger 1 tsp cinnamon 1/4 tsp nutmeg 1/4 tsp clove Cream Cheese Frosting 4 oz. cream cheese 1 1/2 to 2 cups powdered sugar 1 tsp vanilla extract 1/2 cup chopped pecans (optional) Instructions In a large mixing bowl blend butter and sugar together until creamy. Add vanilla, egg, and slowly blend in the applesauce. Add flour, baking soda, and spices. Mix until combined. Pour into a greased loaf pan. Bake in a 350 degree oven for 45 to 50 minutes or until a toothpick comes out clean. To make frosting, blend cream cheese, powdered sugar, and vanilla until creamy. Spread over cooled cake. Top with chopped pecans. Pumpkin Bread 1/2 cup oil (I use coconut) 1 cup sugar 2 eggs 1 can pumpkin puree 1 tsp vanilla extract 1 tsp baking soda 1 3/4 cup all-purpose flour 1 tsp cinnamon 1/2 tsp pumpkin pie spice 1/2 cup milk Streusel topping 1/2 cup flour 1/4 cup brown sugar 1/2 tsp pumpkin pie spice 1/4 cup melted butter Instructions Blend together oil and sugar. Add eggs, pumpkin, vanilla and stir. Add the rest of ingredients until well combined. For streusel topping combine all ingredients until crumb texture. Pour batter into loaf pan and top with streusel topping. Bake in a 350 degree oven for 30 minutes or until an inserted toothpick comes out clean. Lemon Poppyseed Bread 1/2 cup oil (I use coconut) 1 cup sugar 2 eggs 2 Tbsp lemon zest 1 tsp almond extract 1 3/4 cup all-purpose flour 1 tsp baking powder 3/4 cup milk 1 Tbsp poppyseeds Lemon glaze 1/3 cup sugar 2 Tbsp lemon juice 1 Tbsp lemon zest Instructions Blend together oil and sugar. Add eggs, lemon zest, almond extract. Add flour baking powder, poppyseeds, and milk. Pour into loaf pan and bake in a 350 degree oven for 30 minutes or until an inserted toothpick comes out clean. To make the glaze, add ingredients to a small sauce pot. Bring mixture to a boil and turn off the heat. Pour glaze over bread as soon as it comes out of the oven.
