This is also one of my favorite pastes that I use often for cakes, cookies, mooncakes, pastries, sweet dumplings and other desserts. I used coconut water this time to steam this paste, as coconut water brings nutritional benefits. For cooking, it will make a delicious flavor and natural sweetness. You can add less sugar to your pastes/fillings, it’s better to use the fresh coconut water. Sometimes, I use coconut milk/cream for my pastes/fillings. Please give it a try and enjoy our sweet delightful recipe with your family and friends ❤️ 📌Ingredients *12oz/1 bag (340g) split mung bean *1 cup coconut water *65g unsweetened shredded young coconut - chopped (optional) *½ cup (120g) organic cane sugar/caster sugar *¼ tsp salt *3 tbsp vegetables/corn oil 📌Preparation and Instructions 1. First, we need to wash/rinse the split mung beans well with cold water. Remove bad beans if you see any 2. 1st wash - the water will be yellow. Wash/rinse well with cold water at least 5 times or until the water turns clear. 3. This is the 5th time, water should be clear, and drain it. 4. Use a wok/pot and boil some water to steam the mung bean 5. Add a cup of coconut water and salt into mung beans. Cover with lid and steam for 30 minutes with medium low heat. 6. Then add sugar, chopped shredded coconut and steam for another 15 minutes or until beans turn soft. *Please check if water level drops on wok/pot, add more if needed* 7. Check if it is soft and cooked 8. Transfer the cooked split mung beans to a food processor, blend with high/purée speed until fine and smooth. 9. Transfer puréed mung bean to nonstick pan. Cook with medium heat until it reduces moisture. Keep stirring until it turns thick, and to avoid dryness or burning. 10. Add oil. Continue stirring and flipping until it firms and holds its shape. 11. This is ready, remove from the heat 12. This mung bean paste is to use for desserts, pastries, steam cake and others.
