Coconut Shrimp Recipe 😋👇 Marinate the shrimp first by tossing them with chicken rub or a simple mix of salt, cumin, and chilli powder, making sure they are evenly coated, and set them aside for about 15–20 minutes to absorb the flavors. Heat a pan over medium heat with a little oil, fry the marinated shrimp until they turn pink and lightly golden on both sides, then remove and set aside. In the same pan, add a bit more oil if needed and sauté finely chopped ginger and garlic until fragrant. Add chopped onions and fry until soft and lightly golden. Stir in sliced baby corn and bell peppers, cooking them for a few minutes until slightly tender. Season with salt, cumin powder, and chilli powder, and fry briefly to release the spices’ aroma. Pour in tomato purée and cook until the mixture thickens and the raw taste disappears. Add coconut milk along with a small pinch of sugar, stir well, and let it gently boil until the sauce starts to thicken. Finally, return the fried shrimp to the pan and simmer for a few minutes until fully cooked and coated in the creamy coconut sauce.
