This vlog from our trip back in November! I wasn't able to talk about AliPay much, but it's the app you'll be using most of the time. We used it to pay, order food in restaurants, cafes or food stalls, book Didis, and ride public transport such as trains and buses. Before your trip, you have to input your credit card details and your IDs, then you would also need internet to access its features. Also, it would be helpful if you download Baidu Maps! It works just like Google Maps.
