Elevate your dessert experience with the enchanting fusion of creamy custard and luscious blueberries in every heavenly bite. ----------------------------------------------------- Follow us on our Facebook page: Flavourful Plates If you make this one, feel free to share your work with us❤️❤️ ------------------------------------------------------ 💡Ingredients and Instructions ⭐️ Tart Shells: • Waterproof Tart Shells Recipe (Never Soggy!) ⭐️Blueberry puree 250g (1¾ cups) blueberries 35g (3 tbsp) sugar 5 ml (1 tsp) lemon juice ➡️ Combine all ingredients in a saucepan, cook at medium heat until boiling, reduce heat and simmer until the sauce thickens. Use an immersion blender to blend to get a smooth puree. Use 250g purees for the custard part, and save 20g puree for decoration later ⭐️ Blueberry Custard 230g (1cup) blueberry puree 115g (½ cup + 2 tbsp) heavy cream 40g (3 tbsp) sugar 60g (3 large egg yolks) 23g (1.5 tbsp) cornstarch 23g (1.5 tbsp) butter ➡️ Combine all egg yolks, sugar, salt, and cornstarch in a bowl, mixing until pale in color. Heat the heavy cream until small bubbles form, then remove it from the heat. Slowly pour the hot heavy cream into the egg mixture while whisking to avoid lumps. Add blueberry puree to the mixture and return it to the heat. Cook while whisking constantly until a thickened custard forms. Remove from heat, add butter, and blend well. Divide the blueberry custard into each tart shell and wait for it to cool completely before baking. Transfer to the oven and bake at 350F (175C) for 12 - 15 mins. Allow it to cool completely and refrigerate overnight before cutting.
