Mirchi Bada/Bajji is one of the famous south indian snacks which is authentically made up of Shimla Michi with tamarind stuff, besan batter and deep fried. Mint chutney and sliced oinions are best accompaniments. Ingredients: • Besan – 1cup • Rice flour – 1cup • Turmeric – ½ tbs • Chilli powder – ½ tbs • Ajwain – ½ tbs • Salt to taste (1/2 tbs preferred) • Cooking Soda – ½ tbs • Water – 30ml • Oil for deep fry • Whole coriander seeds – 10gm • Fennel seeds – 5gms • Cumin seeds – 5gms • Tamarind – 15gms • Shimla Mirchi – 250gms Procedure: • Soak tamarind in a bowl for at least 10 min. • Take another bowl add besan, rice flour, turmeric, chilli powder, ajwain, salt, cooking soda and water; mix all the ingredients well, make sure no lumps are formed • Take a fry pan and dry roast coriander seeds, fennel seeds, cumin seeds and let it cool. • In a mixer jar add dry roasted ingredients, salt and soaked tamarind; make it into a fine paste • Slit the Shimla mirchi and stuff the grounded paste in them. • Hold the stuffed mirchi and dip into the besan batter and gently drop into hot oil(medium flame). • Deep fry them in low flame to make them crispy and crunchy. • Fry them until they turn into golden brown color.
