Coconut jam, also known as kaya jam or simply kaya, is a sweet spread made from a base of coconut milk, eggs and sugar. It is popular throughout Southeast Asia. Homemade KAYA Eatable Recipe ================================= 450g eggs (about 9 medium size egg) 350g (12oz) White sugar 500g (2 cups) Coconut milk 6 pandan leaves (about 20g) Palm sugar 80g (2.8 oz) for a little colour and fragrance. Method ======= 1. Heat the coconut milk gently don't boil, put the pandan leaves into the hot coconut milk. Steep the leaves for fifteen minutes. 2. Beat the eggs in a bowl to combine the yolks and whites. 3. Filter the egg mixture with a strainer to remove the undissolved egg white. 4. Prepare double boil. (Bain marie) 5. Strain the leaves and pour the slightly cooled coconut milk into the egg mixture. 6. Add white sugar into egg mixture. 7. Double boil for forty-five minutes stirring from time to time. Add the palm sugar when it is about to thicken. 8. Cook until it achieves the consistency you desire. 9. Transfer to jars and let cool. 10.Store in refrigerator.
