METHI / GREEN GARLIC NA DEBHRA CHEF AANAL KOTAK PREP TIME: 5-10 mins COOKING TIME: 25-30 mins INGREDIENTS: • 1 cup bajra flour • 1 cup wheat flour • ½ cup methi leaves (chopped) • ½ cup green garlic (green part)(chopped) • 2 tbsp coriander leaves (chopped) • 3 tbsp green chilli ginger garlic paste • 2 tsp carom seeds • 1/4 cup green garlic (white part) (chopped) • 1 tbsp sesame seeds • 1 tbsp red chilli powder • ½ tsp turmeric powder • ¼ tsp sugar • Salt as per taste • 2 tbsp curd • 1 tbsp oil • Water as required FOR AMBA HARDR PICKLE: • 1 cup turmeric roots • 1 tbsp pickle masala • Salt as per taste • ½ cup oil • 1 tsp hing • 1 tsp mustard seeds METHOD: • In a bowl add bajra flour, wheat flour, methi leaves, green garlic, coriander leaves, green chilli, ginger, garlic paste, carom seeds, green garlic (white part), sesame seeds, red chilli powder, turmeric powder, sugar, salt, curd and oil. • Combine this all well. • Gradually add water and knead a soft dough. • Further take a portion of dough, coat it in dry flour, roll into debhra and roast in on tawa by adding ghee. • Set this aside till serving • Now to make turmeric pickle, in a bowl add turmeric roots, pickle masala, salt. • Further in a pan heat oil, add hing, mustard seeds and let mustard seeds crackle. • Add this hot oil in turmeric roots and mix. • Cover and rest it for 10-15 minutes. • Serve with debhra. #chefaanalkotak #recipe #dhebra #gujaratirecipe
