Ingredients Chicken - 1 kg Onion -2 to 3 nos Shallots - 10 to 12 nos Tomatoes - 2 to 3 nos Ginger -1 nos Garlic - 5 to 6 nos Green chilli - 3 nos Curry leaves - 2 to 3 sprigs Grated coconut - 1 cup Cardamom - 2 to 3 nos Cinnamon - 1 or 2 nos Star anise- 1 or 2 nos cloves - 3 to 4 nos Fennel seed - 1 tsp Red chilli powder - 2 tsp Coriander powder - 1 1/2 tsp Turmeric powder - 1/2 tsp Salt - 1 or2 tsp Oil - 2 to 3 tbsp Method Peel the onion and shallots, set aside. Then peel the ginger and garlic and set aside. Wash the peeled onion, shallots, green chili, tomatoes, ginger, garlic and green chili. Chopped the tomatoes and ginger, set aside. Then chopped the onion and shallots, set aside. Then grate the coconut and set aside. Heat oil in a pan, add grated coconut, saute it well. Add star anise, cardamom, cinnamon, cloves, fennel seed etc. Then add shallots and saute them well. Add the curry leaves and saute them well till they become a light brown color. Add curry leaves such as red chili powder and coriander powder Saute and roast them well and set aside. Then grind the roasted ingredients into a fine paste and set aside. Crush the ginger and garlic and set aside. Heat oil in a pan, add chopped shallots, onion and green chili. Saute them well for a few minutes. Then add the crushed ginger and garlic, saute them well. Add turmeric powder and tomatoes, saute them well till they become mashed. Then add the cleaned chicken and combine them well. Now we have to add a sufficient amount of water into the grinded coconut masala bowl. Mix them well to make a smooth paste. Then pour the masala into the curry pan and combine them well. Cover and cook them well. Remove the lid and check whether the chicken is well cooked or not. Once it is well cooked, add curry leaves and mix them well. Remove from fire and set aside. Serve the roasted coconut chicken curry with boiled tapioca.
