I delayed the first day of spring special because I had the flu that week. So today I made a lightly spiced carrot cake with coconut cream cheese frosting and decorated to look like a carrot patch. Ingredients: Cake: 2 c all-purpose flour 1 tsp baking soda 1 tsp baking powder 1 tsp salt 2 c granulated sugar 3/4 c light brown sugar 1 1/2 c vegetable, canola, or melted coconut oil 4 L eggs 1 tsp vanilla extract 2 tsp cinnamon 1/4 tsp cloves, optional 1/4 tsp nutmeg, optional 1/4 tsp allspice, optional 1/2 tsp ground ginger or 2 tsp grated ginger, optional 1 lb carrots (5 carrots) 1/2 c raisins, optional 1 c walnuts, optional 1 c pecans, optional Coconut cream cheese frosting: 16 oz cream cheese, softened 1/2 c unsalted butter, softened 4 c powdered sugar Pinch of salt 3 tbsp milk 1 tsp vanilla extract 1 tsp coconut extract or 1 c sweetened shredded coconut Decor: Dirt: 2 oz (4 tbsp) cream cheese, softened 1 1/4 c powdered sugar, sifted 4 tbsp unsalted butter softened, room temperature 1/2 tsp vanilla extract 2 tsp milk (more if needed) Pinch salt 2 tbsp cocoa powder Candy carrots: 2 bags white chocolate chips or candy melts, 1 orange & 1 green (or 2 white) A few small drops of green and orange food coloring (only if you have 2 bags of white chocolate chips or candy melts) Directions: Cake: Preheat oven to 350. Spray cake pans with nonstick spray. Set aside. In a large mixing bowl, combine all dry ingredients (except sugars) including the spices. Set aside. In another mixing bowl, whisk together eggs, sugars, oil, and vanilla extract until combined. Stir wet into dry and mix until combined. Add carrots, raisins (if using), and nuts (if using) and gently fold until combined. Pour batter evenly into 2 or 3 9 to 10-inch cake pans. Bake in preheated oven for 30-35 minutes until the toothpick comes out clean. Cool completely. Coconut cream cheese frosting: Beat cream cheese and butter on medium speed until smooth. Add salt, vanilla extract, coconut extract (or shredded coconut), and milk and beat until combined. Gradually add powdered sugar and beat until combined. Decor: To make the dirt, follow the same directions as the cream cheese frosting. Melt candy melts or white chocolate in the microwave as directed in 2 separate bowls. If using white candy melts or white chocolate, dye one orange and one green. Stir with spoons until combined. Fill the carrot mold with the colored candy melts. Pop in the freezer for a few minutes until ready to use. Assemble: Carefully spread nuts all over the sides of the cake. To make a carrot patch design, make 3 straight lines on the top of the cake out of the chocolate cream cheese. Carefully place carrots in the "dirt" to make it look like a carrot patch.
