Hey everyone, Somayeh here! ☁️ Today, I'm taking you through the incredible, full process of making one of my favorite traditional foods from my hometown: Kashk-o (also known Kaleh Joosh). It's a tangy, hearty, and absolutely delicious Persian stew that is the definition of comfort food. In this video, I made it completely from scratch, starting by milking our goat on a quiet, cloudy day while Kourosh was away in the city for school. There's something so peaceful about continuing these ancient nomadic traditions. ✨ What You'll Witness in This Video: → Milking the goat in our traditional milking area (the "Bareh") → Transforming the fresh milk into homemade yogurt → Churning that yogurt to get fresh butter and buttermilk → Boiling the buttermilk and hanging it in a cloth sack to make WET KASHK (the star ingredient!) → Finally, cooking the authentic Kaleh Josh (Kashk-o) with that fresh, tangy kashk → Enjoying it with the Panjeh Kash bread I baked the day before, some raw onion, and fresh mint.
