Subscribe if you haven’t as I post here weekly. Enjoy! Ingredients: 1 Cup warm milk (not hot) 4 Tbs granulated sugar (divided) 1/2 Tbs active dry yeast 3 1/4 Cups all purpose flour (divided, plus more for dusting) 1 egg room temp 1 Tbs unsalted butter (melted) 1/2 tsp salt 1 egg ( beaten with fork for egg wash) 2 Round 9” cake pans For Sweet Cheese Filling: 1 Cup Farmers cheese 4oz cream cheese (softened) 1 egg 1/4 cup raisins 2 Tbs granulated sugar For Cherrie Filling: 1/2 lb sweet cherries (pitted) 1/4 cup granulated sugar (about 1 to 2 tsp for each bun) Crumb Topping: 4 Tbs unsalted butter (cold, diced) 1 Tbs sugar 1/2 cup all purpose flour To start the dough, in the standing mixer add warm milk and yeast. Let it sit at room temperature for 5-7 minutes for yeast to activate. Stir in 1/2 cup flour and 2 Tbs sugar, whisk until blended, then let rise at room temperature for 30-45 minutes (For a faster speed pre-heat oven to 100F and let rise for 20 minutes) After time, whisk in 1 egg, remaining 2 Tbs sugar and salt. Now with dough hook attached, add in remaining flour, 1 cup at a time. The dough is perfect when it is no longer sticking to the walls. Not all flour created equal, some will need more or less. Continue mixing on low speed for 15 minutes. Cover your mixing bowl with plastic wrap and set aside to rise. The dough will double in size and it is worth the wait. At room temp for 2 hours (or oven heated to 100F for 1 hour) While the dough is rising lets create fillings. For the cheese filling, combine all ingredients and mix all in. Wash the cherries and pit them if needed. Whisk egg for the egg wash for later use. Butter two cake pans and set a side. After the dough has risen, transfer to a good working space. Dust with flour if needed. Cut off a small size piece and work with your hands to create a ball. Assemble inside the pans. With a narrow drinking glass push in middle of each dough to create a well. Fill one pan with cheese filling and other with cherries, sprinkle sugar over cherries. Make crumb topping by combining all ingredients and with your fingers or pastry cutter rub your hands to created crumb like mixture. Use the egg wash on all the buns and sprinkle with crumbs over cherries. Placing the pans in pre-heated over at 360F bake for 25-30 minutes or until golden in color.
