Authentic Konkani Pathrode (Colocasia Leaf Rolls) 🌿 Pathrode is a traditional Konkani delicacy made using colocasia (arbi) leaves layered with spicy rice batter, rolled and steamed to perfection. This flavorful dish is best enjoyed hot with a drizzle of coconut oil on top. In this video, I’m sharing the step-by-step method to prepare soft, spicy and delicious Pathrode at home. 📝 Ingredients: Red dried chillies – 15 to 20 Grated coconut – 1 whole coconut Star fruit (Carambole) – 10 (or small lemon-sized tamarind) Dosa rice – 3 cups (soaked for 2 hours) Chilli powder – 1 tbsp Turmeric powder – 1 tbsp Salt – 3 to 4 tbsp (adjust to taste) Hing (asafoetida) – ½ tbsp Colocasia leaves – 20 to 25 Coconut oil – for serving 👩🍳 Method: In a mixer jar, first grind the red dried chillies. Add grated coconut and grind lightly. Add chopped star fruit (after removing edges) or tamarind and grind into a smooth paste. Transfer this mixture into a large bowl. Drain soaked dosa rice. Grind half the rice coarsely (not smooth) Add a little water while grinding — just enough to help it blend, but make sure the batter remains thick and add to the bowl. Grind the remaining rice the same way and mix everything well using your hands. Add chilli powder, turmeric powder, salt and hing. Mix thoroughly to form a thick batter. Wash colocasia leaves, remove stems and pat dry. Place one leaf (back side facing up), spread batter evenly. Place another leaf on top and repeat layering (5–6 leaves). Roll tightly to form a log (Pathrode shape). Steam on low to medium flame for about 1 hour. Allow it to cool slightly, slice and serve hot with coconut oil drizzled on top.
