In this video, I am making a Gluten-Free Torta Caprese. This is a traditional Italian cake made with chocolate. It is named for the island of Capri. It is a simple recipe but so rich and delicious. This was adapted from Giada De Laurentiis from the Food Network. Gluten Free Torta Caprese (Sugar Free) Adapted by Susan Orr from a recipe from Giada DeLaurentiis INGREDIENTS 2 Sticks of butter (I use vegan butter) 1 ½ cups dark chocolate (I use Lily’s) 5 eggs, separate whites from yolks 1 cup sugar (I use Xylitol or Monkfruit) 1 teaspoon vanilla 1 ½ cups of almond flour Prepare the springform pan: wipe down with butter then place a parchment paper circle in bottom of pan. DIRECTIONS 1. Melt 2 sticks of the butter with the dark chocolate. I use vegan butter and Lily’s dark chocolate chips (sweetened with Stevia)in a double boiler). 2. Beat egg whites with a pinch of salt to stiff peaks. 3. Beat yolks with 1 cup of sugar (I use Xylitol or Monkfruit) and 1 teaspoon of vanilla. 4. Cool chocolate once melted. 5. Add 1 ½ cups of Almond flour and the egg yolk mixture to the melted chocolate. Cool chocolate first so you don’t get scrambled eggs. Mix well. 6. Gently fold in the whipped egg whites. 7. Pour into prepared springform pan. Bake 40 minutes in 350 degree F oven. Loosen the springform pan, let cool. Dust top with powdered sugar (I use Swerve) or cocoa. 8. Serve with whipped non-dairy topping or whipped cream, berries, or gelato.
