Perfect for outdoor cooking lovers who enjoy authentic Indian flavors with a rustic twist! --- 🧂 Ingredients For Marination: 1 kg chicken (bone-in pieces) 1 cup curd (yogurt) 2 tbsp ginger-garlic paste 3 green chilies (slit) 2 tsp red chili powder 1 tsp turmeric powder 2 tsp garam masala 1 tsp biryani masala Juice of 1 lemon Handful of chopped mint leaves Handful of chopped coriander leaves Salt as needed 3 tbsp oil For Rice: 2 cups basmati rice (soaked for 30 minutes) 2 bay leaves 4 cloves 2 cardamoms 1 cinnamon stick 1 star anise Salt to taste For Dum: Fried onions (1 cup) A few drops of kewra or rose water (optional) 2 tbsp ghee Saffron strands soaked in warm milk (or food color for natural tones) Banana leaves (for serving) --- 🔥 Cooking Method Step 1: Marinate the Chicken 1. In a large bowl, mix all marination ingredients. 2. Add the chicken pieces and coat them well. 3. Cover and let it rest for at least 2 hours (overnight for best flavor). Step 2: Cook the Rice 1. In a large pot, boil water with bay leaves, cloves, cardamom, cinnamon, and salt. 2. Add soaked rice and cook until 70% done. 3. Drain the water and set the rice aside.
