MISS BERTHA’S: At this famous breakfast spot, I had some tender chicken tamales topped with a rich, gravy-like sauce. I loved the soft maza (corn dough) and the flavorful gravy. It was very inexpensive at only $3 Belizean! SAN ANTONIO: In this indigenous Maya (Masewal) village, I watched locals make Chaya tamales, fritters made from a root vegetable called macal, and escabeche (shredded chicken and onions in a tortilla). I also tried atole (a corn porridge), helped make some coffee, and tried a Chaya omelet with potatoes before ending with a coconut biscuit!
