Preheat oven to 375 °F 2. Coat sweet potatoes with grapeseed oil, butter, and a generous amount of salt 2. Bake for 45 minutes at 375°F 3. Spoon out sweet potato and season with maple syrup, cinnamon, brown sugar, vanilla extract, black pepper, salt, ricotta, nutmeg - blend well to get rid of inconsistencies 4. Slowly add flour and knead the dough 5. Cut off smaller pieces and roll out the dough - cut bite size pieces 6. Bring a pot of water to a boil and carefully drop in the gnocchi - once they rise to the top, they're ready to be taken out 7. Add butter to a preheated pan, add sage and boiled gnocchi 8. Add black pepper and a pinch of salt for taste - gnocchi should be golden brown 9.
