Graham Kirkham is one of the UK's few-remaining producers of traditional Lancashire cheese, carefully following time-honoured methods handed down by his Grandma, coupled with his own considerable skills as a cheese-maker. In this video Andy of the Courtyard Dairy chats to Graham Kirkham, of Mrs Kirkham's Lancashire Cheese, to find out the story and history of Kirkham's Lancashire, and to taste and hand-pick the tastiest cheeses from those available. Graham Kirkham's Mum, Mrs Kirkham, started making cheese on their current farm here in 1978 and they still follow the traditional methods of: using their own unpasteurised (raw) milk, cloth binding (still buttering up and sealing on the cloth) and using several days curd (two or three day curd Lancashire's) to make traditional 'creamy' and 'tasty' Lancashire cheese.
