It’s the end of peach season here and I’ve given away all that I can. Nobody wants another bag of peaches, so I had to decide what to do with the ones still sitting on my counter. I thought about jam, but we really don’t use much of it, so instead I started peeling and slicing to see what I could make. Some of the peaches were beautiful and firm, perfect for pie filling, and some were soft and overripe so those got chopped and set aside. I saved the peach water too because why waste that good flavor. In the end I made jars of peach pie filling, froze diced peaches for oatmeal, and canned up the peach water so we can enjoy it later as a simple drink or even a matcha peach tea. (Promo Code SHOP1870 to get 10% off) 🍑Peach Pie Filling Recipe🍑 Start with about 9–10 cups of sliced peaches. In a large pot, combine 3–4 cups sugar (the recipe used 3 cups plus about ¼ cup molasses for depth of flavor), ¾ cup Clear Gel (the canning-safe thickener), cinnamon to taste, and 3 cups of peach water (the liquid saved from peeling and slicing peaches). Whisk until smooth and bring the mixture to a boil. Once boiling, stir in ¾ cup lemon juice and about ½ teaspoon almond extract. Add the peaches and stir until well coated. Fill wide-mouth quart jars, leaving at least 1¼ inches of headspace to allow for expansion. Process in a steam canner or water bath canner for 30 minutes. 🍑Canning the Peach Water🍑 The water left from blanching and slicing peaches can be saved as a lightly flavored drink. To can it, strain the liquid, bring it back to a boil, and pour it into clean jars. Add lemon juice if desired for brightness, leaving ½ inch headspace. Wipe rims, apply lids and bands, and process in a boiling water bath for 10 minutes (adjusting time for altitude if needed). Once sealed, label it as “peach water” and store in your pantry.
