Hiyashi Osaka Tsukemen breaks the concept of Osaka udon in every way. The standard image of Osaka udon is thick, fluffy and soft noodles. However, the udon noodles at this restaurant are thin and chewy. And among the many chilled udon, I have never tasted udon as cold as this restaurant's udon. This is because the noodles are made from udon dough in a machine and boiled each time they are ordered. After boiling, the udon noodles are then cooled in cold water and placed in a chilled bowl, into which the chilled soup stock is added. Thorough temperature control is the key to this texture. The cold udon noodles themselves are the realm of perfection, but they are served in a soba choko (soba sauce) like soba noodles, with udon soup instead of soba sauce.
