These juicy meatballs are infused with the rich flavors of miso and the warmth of ginger, then coated in a sweet and slightly salty Yakitori sauce. This dish is comforting and satisfying, perfect for a cozy meal. The perfect balance of flavors makes every bite truly irresistible. Have fun in the kitchen.😊 Ingredients for Chicken meatballs Ground Chicken Thigh (300g) You can use Ground Chicken Breast instead, but we Japanese prefer using Thigh meat for this dish since Thigh meat is much more flavorful, and makes meatballs a lot juicier. Onion (half, medium size) Panko Bread Crumbs (15g) Potato Starch (1Tbsp) White miso ( 1tsp) Mirin (1Tbsp) Salt (2pinches) Egg (1) Fresh Ginger Ingredients for Yakitori Sauce Soy sauce (2Tbsp) Sake (2Tbsp) Mirin (2Tbsp) Preparation Instructions 1) Chop half an onion. Don't chop it too finely. If you do, you won't feel the crunch when eating. 2) Cut a leak into bite-sized pieces. 3) Add 2 pinches of salt to the ground meat and knead it thoroughly. ( Once done, the ground meat becomes very sticky.) 4) Add the rest of the ingredients to the ground meat. ( Chopped onion, Panko, Egg, Mirin, Miso, Ginger, and Potato Starch) Then, mix them together until the mixture becomes sticky again. 5) Add oil to a cold frying pan and spread it evenly. Then, shape meatballs and arrange them neatly on the frying pan. Once done, move the frying pan onto the oven. And we are ready to cook. Cooking Instructions 1) Turn on the heat to medium-low and cook one side for 5 minutes until they become golden brown. 2) After 5 minutes, turn the meatballs over, add 2 tablespoons of water, and cover them with a lid. Steam the meatballs for 3 minutes. 3) After 3 minutes, take the meatballs out of the pan and set them aside. 4) Cook the leak until it gets a beautiful sear on both sides. Once done, take them out of the pan. And turn off the heat once. 5) Now, we are making the sauce using the same frying pan. So, wipe off any excess oil with paper towels since excess oil will thin out the sauce. 6) Add sauce ingredients to the pan. ( Soy sauce, Sake, Mirin) Then, turn the heat back onto Medium-low. Stir it with a spatula. Keep stirring until the sauce gets thicker and the color deepens. 7) Return the meatballs and the leak to the pan. From this point on, turn them over constantly and coat them evenly with the sauce until they get a beautiful glaze. 8) Once the meatballs and the leak have got a beautiful glaze, and the sauce in the pan is almost gone, they are ready. 9) Turn off the heat and arrange them beautifully on a serving plate.
