We will need: • 1 gallon (4L) milk 1/2 - 2/3 cup lemon juice • 1 1/2 tsp salt In a stainless steel pot, bring milk up to 180 degrees F, stirring constantly. Once temperature is reached add lemon juice. Remove from heat. Let sit undisturbed for 10 minutes. Strain curds from milk. Add salt, stirring it in thoroughly. Scoop curds into soft cheese molds (alternatively you can hang your cheese to finish straining). Once whey is removed, transfer to a clean container. Date and refrigerate for up to 1 week, or freeze.
