Stuffed Pepper with Feta Cheese Recipe 2 Large Romano Peppers 150g Feta Cheese (crumbled) 50g Full Fat cream cheese To taste Balsamic Glaze (or normal balsamic vinegar) Chives (chopped) Parsley Lemon Juice Salt Oregano Preheat the oven to 220c (430f) Blanch the peppers for 9min Mix in a large bowl feta, cream cheese, salt and lemon juice. Then mix in chives. Once the peppers are cooled, slice down the middle to open the pepper and fill with feta mixture. Place the pepper on a roasting tray and drizzle olive oil on top Bake for 15-20min until cheese starts to brown Serve with balsamic vinegar, parsley and oregano Cold Feta Stuffed Peppers Add 50g Greek Yoghurt to feta mix and blanch peppers for 5min
