When Mary Finn sent me one of her old recipe books, a fundraiser for her church roof, I flicked through and came upon a recipe by Mary herself! I've made other lemon pudding recipes (lemon delicious in Australia) but this one is less sweet and I really like it! Join me as I make this delicate dessert that creates its own lemon custardy sauce underneath a light sponge as it bakes :) Ingredients and method given in video. Baking instructions: Preheat oven to 160C without fan/150C with fan/325F/gas 3.5/Aga baking oven. Bake pudding 1-1.5 hours until top is golden and feels set (firm) on top yet still wobbly underneath (that's the custard part). Serve warm on its own or with thick double cream. Also lovely cold - chill leftovers in fridge and serve within 2 days.
