Instant Pot Mini 3qt Italian Sausage and Tortellini with Tomatoes and Basil | Dinner for Two?

I use my IP Mini (3qt) every week to meal prep components such as rice, beans, eggs, and so on. But it’s also the perfect size for small meals and experiments. This easy and delicious Italian sausage and tortellini recipe comes together beautifully as a one pot meal. I especially love how the fresh tomatoes and basil meld together to make a light and flavorful sauce in the end. Depending on how big your appetites are and if you’re serving other courses, this makes a generous dinner for two or a modest dinner for four. Steve and I each had a portion for dinner that night and then he had the rest as work lunches twice during the week. NOTES: • Sausage Choices: I used at hot Italian sausage that was on sale, but you can use any type of fresh sausage that you prefer. Sometimes it’s cheaper to buy in links and then remove the casings, but you can also find sausage sold without casings. Links do vary in size, so just make sure to have between 8-12 oz total in the recipe. The links in the video were 5oz each, making for 10oz total. Also note that you can also use ground pork (unseasoned), chicken, or beef for this recipe, but you may need to add some spices/seasonings to make up for it in the end. • Liquid Choices & Amounts: Chicken broth is my number one go-to for flavorful liquids. Use low sodium or plain water if you wish. The key thing to use 1 cup (8oz) liquid per 4 oz dry pasta. For example, my bag of tortellini weighed 8 oz (actually 8.8 oz) so I needed 2 cups broth (16oz). Don’t worry about the extra 1.6oz ~ much of the tortellini is filling and the onion and sausages also provide extra liquid. For frozen pasta, decrease the liquid by about 20% as there is already water frozen into the pasta. • Tortellini Choices: Cheese-filled is my recommendation here as it won’t compete or clash with the sausage. A mushroom or other veggie filling would also work. • Cooking Time: General rule of thumb for pasta in a pressure cooker is half the normal stovetop time. This specific bag of tortellini says 14 minutes on the stovetop, therefore my cook time in the video is 7 minutes. If your bag says 10 minutes stovetop, your cook time will be 5 in the IP. If it’s 9 minutes stovetop, your cook time will be rounded down to 4 in the IP. Same rules apply whether using fresh, dry, or frozen. Note that even though frozen usually requires a shorter cook time, the pot will take longer to heat up as the pasta thaws and the pot comes up to pressure. **This video and description contain affiliate links. Thank you for the support!** IP MINI 3qt: https://amzn.to/3Jg3PAM IP Rio 4qt: https://amzn.to/46Vwowv IP Duo 6qt: https://amzn.to/434uiap Today’s Ingredients: 2 TB extra virgin olive oil 1 small onion 2 Italian sausage links, casings removed (about 10oz total), hot or mild 3 cloves garlic, sliced 2 cups chicken broth (Better-than-Bouillon and water in the video) 8.8 oz dried cheese tortellini 8 oz grape tomatoes, halved 1-2 TB fresh basil, chopped (plus extra for topping) Optionals for Serving: parmesan cheese, fresh basil Instructions: 1. Preheat the pot to the highest sauté setting and add the oil when the display reads “HOT.” Add the onions and sausage and cook until onions are soft and the sausage is fully browned. Stir every other minute, breaking up the meat as you go. This step should take about 5-7 minutes. 2. Add garlic and cook, stirring continuously, for just another minute. No longer than a minute to avoid scorching the garlic. 3. Add ½ cup chicken broth and deglaze the bottom of the pan. Make sure to scrape up any stuck-on browned bits from the bottom to avoid getting a “BURN” warning later. 4. Add the tortellini and remaining 1½ cups broth. Stir to distribute ingredients evenly throughout the pot. 5. Lock and seal the lid and cook on high for 7* minutes followed by a quick pressure release. [*Cooking time should be half the normal stovetop time as shown on the package. This brand has a 14 minute stovetop time, therefore under pressure time is 7 minutes. See notes above to calculate your pasta’s cook time.] 6. Stir to separate the pasta. Taste and adjust seasoning. 7. Stir in the tomatoes and fresh basil. Cover loosely for about 5-10 minutes for the tomatoes to soften and the sauce to fully absorb. 8.
