Welcome back to Fahid's Kitchen. Today we are making Aloo Paneer (Indian Cottage Cheese & Potatoes). Everyone knows Matar Paneer (Peas & Cheese), but maybe we can argue that Potatoes are better. Today we are combining soft, tender white potatoes with golden-fried cubes of Paneer in a rich, spiced dry “curry”. This is the ultimate vegetarian comfort food because, let's be real, fried cheese makes everything better. Why this recipe wins: • The Texture: We fry the paneer first so it gets that chewy, golden skin and doesn't crumble. • The Aroma: We add Kasuri Methi (Fenugreek) while the potatoes cook, not just at the end, so the flavor penetrates the spuds. • The Simplicity: No blender needed. Just a pan and some patience. The Ingredients: • The Stars: • 6 White Potatoes (Cubed). • 1 Paneer Bar (Cubed). • The Base: 2 Sliced Red Onions. • The Spices: • 1 tsp each: Salt, Turmeric, Red Chili Powder. • ½ tsp Black Seeds (Kalonji) - The flavor secret. • 2 tsp Cumin & Coriander Powder. • 1.5 tsp Kasuri Methi (Dried Fenugreek Leaves). • 1 tsp Garam Masala (added at the very end). The Easy Method: 1. Fry the Cheese: Heat oil in a pan and fry the paneer cubes until they are golden brown (light or medium, your choice). Remove them and set aside. Do not skip this or your paneer will turn into mush. 2. The Masala: In the same oil, fry the sliced red onions until pink. Add the salt, turmeric, chili powder, black seeds, and cumin/coriander powder. Mix until the oil separates. 3. The Potatoes: Toss in the rinsed potato cubes. Immediately add the Kasuri Methi. Mix well. 4. The Steam: Cover the pan with a lid. Let it cook until the potatoes are tender (fork-soft). 5. The Finish: Add the fried paneer back in. Sprinkle the Garam Masala on top.
