I'm trying out my TMJ Cherry Bomb Cherry Jam recipe in the Ball freshTECH Jam & Jelly maker. This jam maker continues to amaze me. It's the easiest jam I've ever made. It's fool proof, so if you've ever wanted to make jam, but were scared, this is the gadget for you! Here's the recipe as shown in the video, using the Ball freshTECH Jam & Jelly Maker: *3 - 3.5 c frozen mixed cherries, lightly thawed (I used dark sweet and dark tart varieties) *3 heavy Tbls Ball Real Fruit Classic Pectin *1/2 c apple juice *2 teas lemon juice *Pat of butter *3 cups sugar *Chop cherries and then mash with potato masher. *Distribute pectin evenly around the bottom of the jam pot. *Add fruit to the pot, spreading it evenly on top of the pectin. *Add butter. *Leaving the lid OFF of the maker, press "Jam". Machine will default to 21 min. Press "Enter" *You will see the pot begin to heat up, spin and stir. *After 4 minutes, you will hear 4 short beeps. It is time to evenly distribute sugar. *Place lid on pot and leave it alone while it continues to count down the remaining 17 minutes. *When it is finished, the machine will beep. Press "Cancel" and unplug. Remove lid and CAREFULLY remove stirrer, using a potholder or silicone mit. Use caution. The stirrer is hot. If there is any foam on the jam, scrape it off with a spoon. *If there are still any larger chunks of fruit, use can use a whisk to break them up. *Use canning funnel and a soup ladle to spoon into sterilized jars. *You may use a screw top lid and store in the refrigerator for 3-4 weeks, or use your favorite canning method to preserve and store it on the shelf up to one year. This recipe is safe for the water bath canning method. Makes about 4.5 half pint jars.
