Allow the amla to cool completely, then remove the seeds. Blend the cooked amla into a smooth paste using a mixer. Heat ghee in a heavy-bottomed kadhai and add the amla paste. Roast on low flame, stirring continuously, until all moisture evaporates and the mixture thickens. Add jaggery and mix well until fully combined. Cook for7–8 minutes, or until the mixture leaves the sides of the pan. Take Black pepper, cardamom, cloves, bay leaf, cinnamon, & Javithri. Grind them into a fine powder. Add Dry ginger powder,Jeshthimadh powder and Jaifal powder. Mix all spice powder. Add this spice powder to the amla mixture. Mix thoroughly. Add saffron. Stir well. Let the mixture cool completely, then gently fold in the dried rose petals. Store in a clean, dry, airtight glass jar. Storage Tips: Store at room temperature during winter.
