How do I cook Courgettes / Zucchini? I've got too many Courgettes! What should I do with all of them? It's coming to that time of year when the courgettes / zucchini are growing like crazy and very often there are so many of them we run out of ideas for cooking them. They can be eaten raw in a salad and are very useful for padding out a grated salad and add extra nutrition in the form of fibre, antioxidants and a range of vitamins and minerals. Again I am bringing to you a very simple recipe with hardly any ingredients. This is the first time I have made this Italian Scarpaccia. I did lots of research and looked at a number of different recipes and there are lots of variations on the same theme. I adapted this recipe from that research. I guess if I had to describe Scarpaccia I would say that it is similar to a pizza or a flatbread, thin, crispy in places and very delicious either on its own or as an accompaniment with salad, cheeses - whatever you want really. Also it is worth noting that it can really be made from whatever you have in the cupboard as long as you remember to remove any excess moisture from any vegetables with a high water content. Feel free to add seasonings that you enjoy and adapt the recipe to suit your own tastes.
