Hello and welcome to Old Ways Gardening and Prepping.🍀 Would like to welcome you each in to our kitchen this evening. Happy to be able to share with you the way I was traditionally taught to make this hominy dish with a few of my own additions. There is a inner joy and peace within when I am able to make my Ancestors foods. With this video I hope to help others to reconnect with their roots as well. Also want to teach you that yes there are two types of hominy the fresh dried chopped corn as well as the lye treated corn. Both are delicious but each has a place in the hearts of the tribes East of the Mississippi river. This delicious dish goes by many names it just depends on which tribal affiliation your ancestry comes from. Below is the base ingredients that I have used of course you can change it to suit your tastes and to keep it vegetarian you can omit the meat. The main thing is you definitely need to cook you some hominy. My Cherokee Hominy 1 lb bag of white or yellow hominy corn (not lye treated) 1 lb of pork tenderloin or meat of your choice Some hickory liquid smoke (optional) Garlic powder Dried parsley Salt and pepper to taste Good chicken bouillon or bone broth 1 large onion, large diced Water Patience is a virtue when cooking hominy and it is worth every second. Now this is a dish that you can't start it and walk away you have to check on it regularly while it is cooking. It is easier to cook it in a crockpot but you still have to watch it.
