For the Chicken Marinade • 1 kg chicken thighs • 2 tbsp yogurt • 1 tbsp garlic & ginger paste • 1 tsp black pepper • 1 tsp ground coriander • 1 tsp garam masala • 1 tsp chili flakes • 1 tsp salt • 1 tbsp chicken tikka spice • 1 tbsp tomato paste For the Sauce • 3 tbsp yogurt • 2 tbsp mayonnaise • 1 tsp crushed garlic • ½ tsp salt For the Wrap • Tortilla bread • Pickles • Mozzarella cheese For Brushing • 1 tbsp tomato paste • 1 tbsp olive oil • ½ cup water Instructions: 1. In a bowl, mix the chicken thighs with yogurt, garlic-ginger paste, tomato paste, and all the spices. Mix well and let it marinate for about 5 minutes. 2. Meanwhile, prepare the sauce by mixing yogurt, mayonnaise, garlic, and salt together. 3. Cook the marinated chicken in a pan with a little olive oil until fully cooked and slightly golden. 4. To assemble the shawarma, spread the sauce on a tortilla. Add the cooked chicken, some pickles, and mozzarella cheese. 5. Fold the tortilla tightly into a wrap. 6. Mix tomato paste, olive oil, and water to make a brushing sauce. 7.
