Learn how to make sugar lollipops and sugar sculptures by pouring and pulling sugar. Here's my easy pulled sugar recipe that I used for this tutorial: • Pulled Sugar recipe and how to make it You can also use isomalt (a sugar substitute) if you want instead of the pulled sugar recipe. You can use any metal ring or cookie cutter to pour the sugar into. Simply rub them with vegetable oil first and your lollipop will easily pop out. Place sugar, water, and vinegar into a pot. Stir gently over low heat to dissolve sugar. Skim foam from the surface using a tea strainer or ladle (these are natural impurities that will cause the pulled sugar to be dull and streaky). Turn to medium heat, stop stirring and bring to a boil, then add corn syrup. DO NOT STIR. Wash down pan sides with a wet pastry brush to prevent crystallization place candy thermometer into syrup. Turn up heat to medium. Boil until the syrup reaches 305-325 (150-167C). Immediately plunge the bottom of the pot in a sink of cold water to stop the cooking process.
