Black Pepper Chicken features tender pieces of chicken stir-fried in onion and almond sauce. Black pepper has dominance in this preparation. The dish is spicy and creamy. Black Pepper Chicken is an excellent example of how a single spice can define a dish and elevate its flavors, making it both simple and versatile. #blackpepper #chicken #chefharpalsingh #namakshamak #cooking #indiancuisine Ingredients Quantity Water for boiling Almonds 2 tbsp Water as required Onion chopped 2 no Green chilli slit 3 no Water as required Curd 4 tbsp Chicken on bone 800 gram Salt to taste Ginger garlic paste 2 tbsp Black pepper crushed 1 ½ tsp Green cardamom powder ½ tsp Garam masala ½ tsp Ginger juliennes 1 inch Green chilli slit 2 no Rose water 1 tbsp Kewra water 1 tbsp Fresh cream ½ cup Ghee 2 tbsp Wheat dough for covering Bay leaves 2 no Mint sprig 3 no Mint leaves for garnish Method :- 1. Place a kadai on medium flame boil water and add almonds blanched well. 2. Side out in a bowl and add water leave for a minute. 3. In that kadai add chopped onion and green chilli slit. 4. Now discard the skin of blanched almonds and add in kadai blanched well. 5. Now strain the blanched onion and keep aside. 6. Take a mixer jar and add blanched onions, water and curd blend a smooth paste. 7. Take a mixing bowl and add chicken, salt, ginger garlic paste, crushed black pepper, green cardamom powder, garam masala, ginger juliennes, green chilli slit, rose water, kewra water and blended onion paste mix well. 8. Now add fresh cream and mix well. 9. Place a kadai on medium flame and heat ghee. 10. Seal the lid with the dough to prevent steam from escaping. 11. Add the marinated chicken, bay leaves and mint leaves. Place the lid on top and cook on low heat for 25-30 minutes. This slow cooking enhances the flavors. 12. Turn off the heat and let the curry rest. Open the sealed kadai, side out in serving bowl and garnish with fresh mint leaves, and serve.
