Prep the Soya 1. Boil water with a little salt. 2. Add soya chunks and boil for 5–7 minutes. 3. Squeeze out excess water and rinse twice in clean water. 4. Squeeze again and set aside. 2. Fry (Optional but tasty!) Heat 1 tbsp oil and lightly sauté the soya chunks until golden. (You can also coat in 1 tsp cornflour + pinch of pepper and shallow fry.) 3. Make the Chilli Base 1. Heat 2 tbsp oil in a wok. 2. Add garlic, ginger and green chillies → sauté until fragrant. 3. Add onion and capsicum → cook on high flame for 1–2 minutes (keep them crunchy). 4. Add Sauces 1. Add soy sauce, chilli sauces, ketchup, vinegar, pepper, salt, and sugar. 2. Stir well. 3. Add the fried/boiled soya chunks and mix to coat. 5. Thicken Pour in the cornflour slurry and mix on high heat for 1 minute until the sauce thickens and becomes glossy. 6. Finish Garnish with spring onion greens. Serve hot!
