Welcome to Eating Green, a cooking show hosted by Chef Jordan Wagman where we redefine Cannabis infused food. Our goal is to teach everyone how to make infused and non infused food using very few ingredients. Today Chef Jordan Wagman will be making one of his signature desserts, infused clean fudge brownies What you’ll need: Preheat oven to 300 F 1 cup (250 mL) maple syrup ¾ cup (175 mL) raw cacao powder ½ cup (125 mL) avocado ¼ cup (60 mL) coconut oil (see tips) 1 tsp (5 mL) cannabis oil (25 mg/mL) 1 tsp (5 ml) organic instant coffee 1 tbsp (15 mL) pure vanilla extract 1 cup (250 mL) almond flour (see tips) Fill a sauce pot with water and bring to a simmer. In a large mixing bowl combine maple syrup, cacao powder, avocado and coconut oil and place bowl over simmering water. Cook mixture over a double boiler until coconut oil has melted. Remove from heat and transfer to a blender or using an emersion blender, add the cannabis oil and puree until smooth. Transfer mixture back to a mixing bowl and add vanilla and instant coffee, mix until coffee is dissolved. Add almond flour and mix well to fully incorporate. Transfer to ramekins and evenly distribute the batter. Bake in a preheated oven until top is firm to the touch and brownies are pulling away from the sides, about 10-12 minutes. Remove and cool to room temperature or, if you’re like me, enjoy immediately! Chef Jordan’s Tips You can add more almond flour to achieve a thicker consistency. If you don’t love the taste of coconut, try aroma-free coconut oil which can be found in most health food and specialty stores.
