Well, I’ve been making this banana bread for years and everyone – without exception – has raved about it. So, what makes this banana bread…well, the world’s best? It scores 100% on every criterion I feel a perfect banana bread should achieve. That is to say, it’s: 1) intensely fragrant from using almost overripe bananas; 2) perfectly moist without being gummy; 3) delicate without breaking apart yet sturdy enough without being dense; 4) satisfyingly sweet without being cloying; 5) Displays a beautifully high crown and attractive color. And of course, though adding nuts is optional, they do add a very nice crunch and contrast in texture. Now that I’ve tooted my own horn a bit... Diamond kosher salt 3/4 cup chopped walnuts, optional GIVE IT A WHIRL: Position rack in middle of oven and pre heat to 350F. Prepare 3 to 4 small (2-cup) loaf pans or 1 large (6-cup) loaf pan: Spray bottom and sides with plain non-stick spray, not baker's spray. Make sure to get the bottom corners as this is where batter tends to stick. Line the pan(s) with a strip of parchment wide enough to rover the length and long enough to come up the sides and over the edge about 1-inch. Set aside. In the large bowl of a stationery mixer, combine the whole bananas, sugars, eggs and vanilla extract. With the paddle attachment, blend the ingredients on low speed for about two minutes. If very ripe, the bananas will breakdown almost completely leaving just a few. small pieces that will break down further once the flour Is mixed In. Scrape down the sides of the bowl. Add the flour, baking powder and salt and again, b.end together on low speed for no more than 7 minutes. During this time, scrape up the bottom of the bowl and scrape down the sides of the bowl to incorporate any ingredients that have stuck. Do not beat on high to speed up the process; low and slow. If using mini loaf pans, divide the batter evenly between three, leaving the fourth for over run, if any. If using a 6-cup loaf pan, fill with the batter. Either way. don’t fill the pan(s) more than 3/4 full or you’ll get nice. big. fat banana cookies on the bottom of your oven! Bake for 35-40 minutes for mini loaves or 50-60 for 6-cup loaf. Breads are done when a skewer or thin knife inserted in middle comes our clean. Transfer to coding rack and allow to come to room temperature before cutting.
