Learn about their physiology and use in the third episode of Big Agriculture. The sugar beet is the second most common source for sugar, behind sugar cane. Their weight is between 13 and 22% sucrose, which can be extracted by slicing, pulping and boiling the beets. This process yields crystallized white sugar and molasses. Over 95% of beets grown in the United States are GMOs, mostly a variety that makes them resistant to Round Up. Beets are also impacted by pests and diseases, like the fungus Cercospora.
