Nutty and packed with protein, this snack will be loved even by kids who hate beans! =============== Kongjeon (about 20 pieces) [Ingredients] Soaking the beans 1 cup (140g) beans (soybeans) 1 cup (180ml) water Boiling the beans all of the soaked beans about 3 cups (500ml) water Bean water all of the boiled beans about 3 cups (500ml) water Ingredients for the batter all of the bean water 1 cup (150g) minced pork 1 cup (110g) Korean pancake mix 1 stalk (100g) green onion 4 (40g) Cheongyang peppers 1 tbsp (20g) minced garlic 2 tbsp (14g) cooking oil about 1/2 tbsp (5g) fine salt [Directions] *Bean water 1. Wash the beans in running water and remove the moisture using a drainer. 2. In a microwaveable bowl, add the beans and water (180ml) and microwave for about 5 minutes. 3. Using a drainer, remove the moisture from the soaked beans. Then, add the soaked beans and water (500ml) to a pot to boil. 4. When the water comes to a boil, continue boiling for another 3 minutes over high heat. 5. Using a drainer, take the boiled beans out of the pot. Then, add the boiled beans and water (500ml) to a blender and blend thoroughly for about 1 minute to make the bean water for the batter. *Kongjeon 1. Chop up the green onion and Cheongyang peppers into 0.3cm pieces. 2. In a large bowl, thoroughly combine the bean water, Cheongyang peppers, green onion, minced pork, minced garlic, Korean pancake mix, and fine salt to make the batter. 3. Drizzle cooking oil in a frying pan and preheat over high heat. 4. Scoop up a spoonful of kongjeon batter and fry over medium heat until the front and back turn golden. 5. When the jeon is cooked to a golden color, plate them and serve. *Dip in vinegared soy sauce to your liking.
