Chocolate and Guinness Cake This Chocolate and Guinness Cake is intended to look like a pint or an Irish Coffee. It is rich and decadent and has a cream cheese and Guinness icing. A really grown up chocolate cake! #BRILLIANTBAKES | #DESSERTS | DINNER PARTY DISHES | FAMILY FAVOURITES | #JAMESMARTIN'SSATURDAYMORNING | SWEET TREATS #EASYBAKING Ingredients For the cake: 300ml Guinness or other stout150g dark chocolate200g butter500g soft light brown sugar4 eggs350g self raising flour For the icing: 400g cream cheese (full fat)25ml Guinness200g icing sugar To garnish: Dark chocolate, grated Line a 20cm deep cake tin with greaseproof paper, pour the cake mix in and bake for 1 hour 15mins. Method Preheat the oven to 160°C. Melt the chocolate and butter with Guinness over a bain marie. Cool slightly, then whisk in the eggs and sugar, then fold in the flour. Line a 25cm deep cake tin with greaseproof paper, pour the cake mix in and bake for 1 hour. Remove from the oven and leave to cool. To make the icing, whisk together the cream cheese, icing sugar and Guinness.
