This apple cake is a simple treat made in French homes for tea time or dessert after dinner. Chock full of fresh apple chunks suspended in a tender vanilla cake, if you are an apple lover, this is for you! Delicious on its own, or taken to the next level with a scoop of cold vanilla ice cream :D Full recipe listed below. I hope you enjoy this video :) INGREDIENTS 3.5 cups, peeled and diced Apple (any of your favourite varieties) 3/4 cup, All Purpose Flour 3/4 tsp, Baking Powder (I say baking soda by accident in the video, but it's baking powder!) 1/2 tsp, Kosher Salt 2 Large Eggs at room temperature 2/3 cup, White Sugar 1/2 cup, Melted Unsalted Butter 2 tbsp, Rum 1 tsp, Vanilla METHOD Preheat oven to 350 degrees and butter and line an 8 inch square cake tin with parchment paper. In a small bowl whisk together flour, baking powder, and salt. In a large bowl whisk together eggs and sugar until well mixed and slightly pale in colour. Add melted butter, rum, and vanilla, and whisk until well combined. Add dry ingredients to wet ingredients, and gently whisk just until no white streaks of flour can be seen. Then add chopped apples, and using a large spoon, gently fold into batter until all the apples have been coated. Pour batter into prepared cake tin, and smooth into one even layer. Place in oven and bake for 45-50 minutes or until top of cake has browned and a toothpick inserted in the middle comes out clean. Remove from oven and allow to cool in tin for a minimum of 30 minutes before unmolding. Cut into squares and serve with a scoop of cold vanilla ice cream.
