Jess and Hannah both absolutely love Hashbrown Casserole. We found this recipe in Nonnie’s cookbook and wanted to give it a try. Jess had sensory issues with the smell of some ingredients, like greek yogurt and cream of celery soup, and didn’t like the idea of adding cheese and onions. The cooking exercise was a good lesson on how ‘unfavorable’ ingredients can blend together to make something yummy. Hash Brown Bake 2-pound bag frozen hash browns, unthawed 10¾ ounce can cream of celery soup 3 cups grated sharp cheddar cheese (12-ounce pkg) I cup sour cream 1 cup chopped onion 6-ounce can French-fried onions Mix everything except the can of onions. Bake in greased 13" x9" glass casserole for 1 hour and 10 minutes at 350' or until golden brown. Sprinkle with the can of French-fried onions and bake 5 more minutes. Hello! Welcome to our page! I’m Val, 53-years-old and a full-time caregiver to my dependent adult daughter. Here, we share our everyday life experiences as a family living with a dependent adult. Our goal is to help other families gain insight and awareness of what everyday life can be like when living with a dependent adult-child with special needs, and to take some of the mystery out of what it will be like when special needs children grow into special needs adults. We want others to know that this life can be good. Beyond challenges and frustrations we find even more joy, entertainment, laughs and good times.
