I have a cozy mountain house near Lake Nojiri in Nagano Prefecture, a peaceful retreat where I can fully appreciate the beauty of each season. Recently, I had the opportunity to discover winter vegetables from Shinano Town, thanks to Mr. Toshiaki Ishikawa, a former manager of a local roadside station (Michino-eki), who always introduces me to the finest local foods. I was amazed by their flavor—the carrots and cabbage were incredibly sweet and tender. Right now is the peak season for winter vegetables. Storing them under a layer of snow allows the cold to naturally enhance their sweetness and umami, creating a depth of flavor I had never experienced before. Wanting to learn more, I visited Mr. Kenji Nakamura’s farm in Shinano Town, introduced by Mr. Ishikawa. Mr. Nakamura was incredibly kind, and before I even realized it, he had gifted me a beautiful snow-covered cabbage to take home. Back in my mountain house, I lit the fireplace, gazed out at the serene winter landscape, and prepared a simple yet delicious dish—Spaghetti with Cabbage. ------------------------------------------------------- Spaghetti with Cabbage 1. Bring plenty of water to a boil. 2. Cut the cabbage into bite-sized pieces. 3. Add salt to the boiling water and begin cooking the spaghetti. 4. In a separate pan, heat olive oil (enough to coat the bottom) over low heat and add minced garlic. Once fragrant, add anchovies, letting them melt into the oil. Then, add chopped red chili peppers for a little heat. 5. Add the cabbage to the pasta pot. Once softened, transfer it to the pan with the garlic and anchovy sauce. Drain the spaghetti, add it to the pan, and toss well to coat everything in the sauce.
