Assalamu Alaikum 🌙 In today's video I prepared homemade Iftar food platters to distribute in my neighbourhood. Feeding others during Ramadan is such a beautiful act of kindness and community. The Prophet ﷺ said: “Whoever gives food for a fasting person to break their fast will have a reward like theirs, without reducing the reward of the fasting person.” (Tirmidhi) In this video I share how I prepared: • Milk Cake Dessert • Chana Chaat • Chicken Pilau • Plus samosas, pakoras, kebabs and dates I packed everything into foil containers to distribute before Iftar. I kept the milk cake dessert separate from the warm food so it stays fresh. My husband also kindly brought samosas, pakoras and kebabs from the restaurant which saved me time frying and helped a lot with the preparation. Alhamdulillah it all came together beautifully and it was such a rewarding experience preparing food for others. Milk Cake Dessert: I started with making the milk cake dessert. I used a large Madeira cake and cut it into slices. I placed the cake into foil containers. For the milk mixture I used three milks – condensed milk, evaporated milk and regular milk. I poured the milk mixture over the cake slices, then piped whipped cream on top and decorated with chopped pistachios and dried rose petals. Once assembled, I placed the containers in the fridge while I moved on to the next recipe. Chana Chaat: Ingredients • 2 cans chickpeas (boiled) • Boiled potatoes • Red onion (chopped) • Tomatoes (chopped) • Cucumber (chopped) • Fresh coriander • Salt • Red chilli powder • Crushed chilli flakes • Tamarind sauce (imli) • Chaat masala Method: I have used two cans of boiled chickpeas and 3-4 boiled potatoes. Then I added chopped red onions, tomatoes, cucumber and fresh coriander. For seasoning I added salt, red chilli powder, crushed chilli flakes, tamarind sauce and chaat masala. Everything was mixed well together and then assembled into foil containers. On top I added yogurt, tamarind sauce, hot and sweet chilli sauce and a sprinkle of chaat masala. I sealed the containers and set them aside. Chicken Pilau Ingredients • 1.5 kg chicken thighs (boneless, cut small) • 4 cups basmati rice (washed and soaked 30 mins) • ½ onion thinly sliced • ¾ cup oil Whole Spices • 3 cinnamon sticks • 2 black cardamom • 1 tsp cumin seeds • ½ tsp black peppercorns • 5–6 cloves • 3–4 bay leaves • 1 star anise Ground Spices • 4 tsp salt • 1.5 tsp black pepper • ½ tsp turmeric • 1 tsp chilli flakes • 2 tsp coriander powder Other • 3 ginger garlic cubes • 1 tomato chopped • Fresh coriander • 7 cups boiling water Method: I started by sautéing half a sliced onion in about three quarters of a cup of oil until golden brown. Then I added the whole spices: cinnamon sticks, black cardamom, cumin seeds, peppercorns, cloves, bay leaves and star anise. Next I added ginger garlic cubes and the chicken pieces. Then I added salt, black pepper, turmeric, chilli flakes and coriander powder. After cooking the chicken for about 10–15 minutes, I added a chopped tomato and fresh coriander. Then I poured in seven cups of boiling water and let it simmer for about 10 minutes. Next I added the drained basmati rice. Once the rice was about 90% cooked, I covered the pot with foil and placed the lid on top, then left it on dum for 20 minutes. I placed an old tawa under the pot for gentle heat. After the dum, I gently fluffed the rice and filled the foil containers. Then I assembled everything into large foil containers. I added the chicken pilau, samosas, pakoras, kebabs, chana chaat and dates. The milk cake desserts were kept separate from the warm food. Once everything was packed, I wrapped the containers with foil and started distributing them in the neighbourhood.
