The meat is incredibly tender, packed with savory flavor, and pairs perfectly with the rich sauce! It’s also fantastic when eaten with a soft-boiled egg or grated yam. Pouring dashi broth on top at the end makes it feel just like hitsumabushi! Another top recommendation is the “Jo Tan Negi” lunch set, loaded with thick-cut beef tongue and green onions! Despite its thickness, the tongue remains tender, offering a pleasant chew and a slightly springy texture that’s seriously addictive. You’ll even get a mini curry on the side, so you can enjoy beef tongue curry as well! The Premium Wagyu Hitsumabushi Lunch is 2,300 yen. The Jo Tan Negi Lunch Set is 2,500 yen! Although the Ginza branch also serves meat hitsumabushi and often has long lines, this second location in Nishi-Shinjuku is still easier to get into!
